&lt;p style="margin:0in 0in 10pt;" class="MsoNormal"&gt;&lt;span style="font-size:small;font-family:Calibri;"&gt;2 Yellow Bell Peppers - diced with seeds removed&lt;/span&gt;&lt;/p&gt;
&lt;p style="margin:0in 0in 10pt;" class="MsoNormal"&gt;&lt;span style="font-size:small;font-family:Calibri;"&gt;1 Large Sweet or Vidalia Onion - peeled and diced&lt;/span&gt;&lt;/p&gt;
&lt;p style="margin:0in 0in 10pt;" class="MsoNormal"&gt;&lt;span style="font-size:small;font-family:Calibri;"&gt;4 Yellow Banana Peppers &amp;ndash; chopped fine&lt;/span&gt;&lt;/p&gt;
&lt;p style="margin:0in 0in 10pt;" class="MsoNormal"&gt;&lt;span style="font-size:small;font-family:Calibri;"&gt;1/2 bunch fresh Cilantro &amp;ndash; chopped fine&lt;/span&gt;&lt;/p&gt;
&lt;p style="margin:0in 0in 10pt;" class="MsoNormal"&gt;&lt;span style="font-size:small;font-family:Calibri;"&gt;1 pint ripe Yellow Grape Tomatoes - pur&amp;eacute;ed&lt;/span&gt;&lt;/p&gt;
&lt;p style="margin:0in 0in 10pt;" class="MsoNormal"&gt;&lt;span style="font-size:small;font-family:Calibri;"&gt;6 oz. Mango - peeled and then pur&amp;eacute;ed&lt;/span&gt;&lt;/p&gt;
&lt;p style="margin:0in 0in 10pt;" class="MsoNormal"&gt;&lt;span style="font-size:small;font-family:Calibri;"&gt;2 large cloves Garlic - peeled and pur&amp;eacute;ed&lt;/span&gt;&lt;/p&gt;
&lt;p style="margin:0in 0in 10pt;" class="MsoNormal"&gt;&lt;span style="font-size:small;font-family:Calibri;"&gt;3/4 cup White Wine Vinegar&lt;/span&gt;&lt;/p&gt;
&lt;p style="margin:0in 0in 10pt;" class="MsoNormal"&gt;&lt;span style="font-size:small;font-family:Calibri;"&gt;1/4 cup fresh squeezed lime juice&lt;/span&gt;&lt;/p&gt;
&lt;p style="margin:0in 0in 10pt;" class="MsoNormal"&gt;&lt;span style="font-size:small;font-family:Calibri;"&gt;1 teaspoon white pepper&lt;/span&gt;&lt;/p&gt;
&lt;p style="margin:0in 0in 10pt;" class="MsoNormal"&gt;&lt;span style="font-size:small;font-family:Calibri;"&gt;1/4 cup white sugar&lt;/span&gt;&lt;/p&gt;
&lt;p style="margin:0in 0in 10pt;" class="MsoNormal"&gt;&lt;span style="font-size:small;font-family:Calibri;"&gt;Pinch of salt (optional)&lt;/span&gt;&lt;/p&gt;
&lt;p style="margin:0in 0in 10pt;" class="MsoNormal"&gt;&lt;span style="font-size:small;"&gt;&lt;font face="Calibri"&gt;&lt;span style="text-decoration:underline;"&gt;Preparation&lt;/span&gt;:&lt;/font&gt;&lt;/span&gt;&lt;/p&gt;
&lt;p style="margin:0in 0in 10pt;" class="MsoNormal"&gt;&lt;span style="font-size:small;font-family:Calibri;"&gt;Remove the core and seeds from the yellow bell peppers, dice them and then put them in cooking pot (a 4 quart sized one works perfect).&lt;span style="mso-spacerun:yes;"&gt;&amp;nbsp; &lt;/span&gt;Peel and dice the onion and add it to the pot.&lt;span style="mso-spacerun:yes;"&gt;&amp;nbsp; &lt;/span&gt;Remove the stems from the banana peppers and finely chop them, as well as, the leaves from the fresh cilantro.&lt;span style="mso-spacerun:yes;"&gt;&amp;nbsp; &lt;/span&gt;Add them to the pot.&lt;span style="mso-spacerun:yes;"&gt;&amp;nbsp; &lt;/span&gt;Pur&amp;eacute;e the yellow tomatoes and then add them to the pot.&lt;span style="mso-spacerun:yes;"&gt;&amp;nbsp; &lt;/span&gt;Pur&amp;eacute;e the mango and the garlic (I simply used a garlic press and added the contents into the food processer with the mango and then pur&amp;eacute;ed them together.)&lt;span style="mso-spacerun:yes;"&gt;&amp;nbsp; &lt;/span&gt;Add the vinegar, lime juice and white pepper to the pot with the other ingredients and then boil the mixture for 20 minutes over medium high heat.&lt;span style="mso-spacerun:yes;"&gt;&amp;nbsp; &lt;/span&gt;Add the sugar and salt, reduce the heat and simmer for 10 more minutes.&lt;span style="mso-spacerun:yes;"&gt;&amp;nbsp; &lt;/span&gt;Cool and serve with blue corn chips.&lt;span style="mso-spacerun:yes;"&gt;&amp;nbsp; &lt;/span&gt;This delicious dip yields approximately 2 quarts of some of the best yellow salsa ever.&lt;/span&gt;&lt;/p&gt;
&lt;p style="margin:0in 0in 10pt;" class="MsoNormal"&gt;&lt;span style="font-size:small;font-family:Calibri;"&gt;Note: I use a food processer to expedite the preparation process and the results have been tremendous.&lt;span style="mso-spacerun:yes;"&gt;&amp;nbsp; &lt;/span&gt;I originated this recipe based on a conglomeration of salsa recipes which I had available.&lt;span style="mso-spacerun:yes;"&gt;&amp;nbsp; &lt;/span&gt;My goal was to have a non-red colored, delicious salsa to serve while cheering the Steelers on to victory over the Cardinals in SuperBowl XLIII.&lt;/span&gt;&lt;/p&gt;

&lt;p style="margin:0in 0in 0pt;" class="MsoNormal"&gt;&lt;span style="font-size:small;font-family:Times New Roman;"&gt;1 - washed up cardinal quarter back&lt;/span&gt;&lt;/p&gt;
&lt;p style="margin:0in 0in 0pt;" class="MsoNormal"&gt;&lt;span style="font-size:small;font-family:Times New Roman;"&gt;5 - mediocre offensive lineman&lt;/span&gt;&lt;/p&gt;
&lt;p style="margin:0in 0in 0pt;" class="MsoNormal"&gt;&lt;span style="font-size:small;font-family:Times New Roman;"&gt;3 - legitimate pass receivers&lt;/span&gt;&lt;/p&gt;
&lt;p style="margin:0in 0in 0pt;" class="MsoNormal"&gt;&lt;span style="font-size:small;font-family:Times New Roman;"&gt;2 &amp;ndash; Steeler Coach wannabe&amp;rsquo;s&lt;/span&gt;&lt;/p&gt;
&lt;p style="margin:0in 0in 0pt;" class="MsoNormal"&gt;&lt;span style="font-size:small;"&gt;&lt;font face="Times New Roman"&gt;&amp;nbsp;&lt;/font&gt;&lt;/span&gt;&lt;/p&gt;
&lt;p style="margin:0in 0in 0pt;" class="MsoNormal"&gt;&lt;span style="font-size:small;"&gt;&lt;font face="Times New Roman"&gt;Toss ingredients vigorously in large (Super) bowl,&lt;span style="mso-spacerun:yes;"&gt;&amp;nbsp; &lt;/span&gt;Bake under extreme heat for 60 minutes.&lt;span style="mso-spacerun:yes;"&gt;&amp;nbsp; &lt;/span&gt;Cool by fanning with large yellow towel.&lt;span style="mso-spacerun:yes;"&gt;&amp;nbsp; &lt;/span&gt;&lt;/font&gt;&lt;/span&gt;&lt;/p&gt;

&lt;p&gt;We moved from Pittsburgh up to Springfield in 1987 and have been living in Patriot/Giants country. My wife and I, and our six children are rabid Steeler fans and every Sunday we prepare a game day menu that returns us to our roots in the &amp;#39;Burg. We make our own &amp;quot;Primanti Style&amp;quot; Cheese Steak sandwiches with egg; Sometimes we do Kielbasa and perogies ala &amp;quot;Brentwood; Other times it is Italian Hoagies ala &amp;quot;Danny&amp;#39;s&amp;quot; Route 51. But our all time favorite and that of all of our friends and is &amp;quot;Super Steeler Stuffed Jalapenos&amp;quot;, not for the faint of heart!&lt;/p&gt;
&lt;ul&gt;
&lt;li&gt;9x12 glass baking dish&lt;/li&gt;
&lt;li&gt;2 jars of Mrs. Renfros Whole Jalapenos (These are the best)&lt;/li&gt;
&lt;li&gt;20oz of chicken breast, diced finely&lt;br /&gt;&lt;/li&gt;
&lt;li&gt;(2) 8oz bags of finely shredded mexican cheese (not taco!) or plain cheddar cheese&lt;/li&gt;
&lt;li&gt;(2) jars Kraft Pimento Spread found in the cheese section&lt;/li&gt;
&lt;li&gt;8oz Sour Cream&lt;br /&gt;&lt;/li&gt;
&lt;/ul&gt;
&lt;p&gt;Drain Jalapenos and slice lengthwise. Remove pulp and seeds then set aside. In a seperate bowl mix all the diced chicken, 8oz of shredded cheese and both jars of Kraft Pimento Spread.&lt;/p&gt;
&lt;p&gt;Mix well. Over Stuff the Jalapeno shells with the mixture and line them, stuffed side up, in the 9x12 glass baking dish. If the dish fills up just stack the remaining ones on top of the others.&lt;/p&gt;
&lt;p&gt;If there is extra filling just glob it on top of the ones already in the dish. When finished, cover the Jalapenos with the other 8oz Bag of shredded cheese. Cover dish with aluminum foil and bake in oven at 350 degrees for 50 minutes. After 50 minutes, take off foil and bake an additional 10 minutes. Pull from oven and let stand for 5 minutes. Cut into &amp;quot;Lasagna&amp;quot; style squares and serve with sour cream. Enjoy and GO STEELERS!&lt;/p&gt;
