As you know, these plants grow very tall! In fact, way beyond my tomato cages. Should I cut the top of the plant off when it reaches the top of a 6' cage so that the strength goes into the remaining plant?

I'd let them grow another foot or so. As long as there's lots of tomatoes on the plant go ahead and cut away when it's time. I never cut mine back, but everyone does it differently.
