Freddie Sarkis, the Embury bartender/PG staffThe Firehouse Lounge in the Strip District welcomes a new boutique cocktail bar with a speakeasy feel. The bar is located on the first floor and specializes in pre-Prohibition era cocktails made from the finest ingredients. It's named Embury, for David Embury, author of "The Fine Art of Mixing Drinks" first published in 1948 and still readily available today.

 Behind the bar you'll find Freddie Sarkis whose experiences include working as an opening bartender Quartino in Chicago, creating the cocktail and wine list for Il Mulino in Chicago and acting as head of mixology for Douglas Rodriguez restaurant DeLaCosta in Chicago.

There's a menu with some delicious options posted on-line, but you'll have the most fun if you put yourself in Sarkis' hands. On a recent Thursday evening, I was in cocktail heaven, trying everything from an old-fashioned made with Buffalo Trace bourbon (I generally prefer bourbon to rye but both are available) Yellow Rose of Texas cocktail at Embury/PG Staffto a Yellow Rose of Texas, made with tequila and yellow chartreuse.

Sarkis puts his own spin on many cocktails--for example, he uses simple syrup made from agave nectar rather than sugar in the Yellow Rose of Texas cocktail, and he flamed the bitters (angostura, I believe) as the final touch to a pisco sour.

While part of me longs to keep this place to myself, hopefully Sarkis and Warren will show bartenders, bar-owners and restaurateurs around Pittsburgh that we're willing to pay and wait for drinks when they're made as well as these.

The Embury website is out of date, unfortunately, as their new cocktail menu is still under development. Mr. Sarkis takes a more modern approach to his work, eschewing vodkas and flavored rums in favor of classic spirits, fresh juices and herbs, a variety of bitters, and house-made syrups and tinctures. As far as I am aware, he is the only classic/craft bartender working in Pittsburgh.

I too accidentally stumbled upon Embury and was blown away to discover a bartender in Pittsburgh who prefers Bourbon to a vodka/soda.  The Firehouse has always had cutting edge cocktails, e so this is a perfect way to round out this establishment.  I'm hoping for selfish reasons that this remains a hidden secret for the time being because I know that as soon as people catch on it will be difficult to find a seat.

I had the pleasure of going to Embury this evening! The atmosphere, the libations, and the conversations were all fantastic. I had the most intriguing cocktails developed and poured by the amicable and infinitely knowledgeable Freddie Sarkis. I loved the ginger tom collins that my drinking partner had, but my favorite drink of the night was the "Guilty Rose." I need to go back just to get a recipe, not that I think I will be able to replicate it. It was quiet and there was plenty of booth space for a Thursday night. I'm sure that won't be the case in a few weeks, once more people find out about it!
